Oh, I almost forgot. You can make cheese using lime. I make at home and it's very tasty, almost like ricotta, but harder. Like a cross of ricotta and mozarella. You don't have to work so much to obtain the cheese, just add the lime juice to the milk and some salt, leave it like that until it coagulates and a green clear liquid is left. Then carefully take the cheese that is floating and put in in a cheesecloth and squish water out. put it on the refrigerator and eat it with some crackers...mmmmm
