Healthy Soft Black Bean Tacos

This recipe is from today's New York Times. If you need an idea for tonight's dinner, try this easy recipe.

Soft Black Bean Tacos

1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon ground cumin seeds
2 cans black beans, with liquid
8 corn tortillas
1 cup fresh or bottled salsa*
2 ounces queso fresco or feta cheese, crumbled
*Some jalapeño and serrano peppers from Mexico were implicated in the recent salmonella outbreak, so be sure to check the source if you use fresh salsa.

1. Heat the oil in a large, heavy nonstick skillet on medium-high, and add the chili powder and ground cumin. Allow the spices to sizzle for a half-minute, then stir in the black beans and 1/2 cup water. Mashing the beans with the back of your spoon, cook for 10 to15 minutes, until thick and fragrant. As a crust develops on the bottom of the pan, mix the crust into the beans. If they seem too dry, add more water. Remove from the heat.
2. Heat the tortillas, two or three at a time, in a dry skillet on medium-high, or in a microwave. Top with the black beans, about two rounded tablespoons for each tortilla. Spoon on some salsa and sprinkle on the cheese. Fold the filled tortillas in half and serve.
Advance preparation: The refried black beans will keep for three days in the refrigerator. You will have to moisten and thin them with water when reheating.

I love this flaxseed bread recipe. it has a great moist texture. i found it online last week and i've alredy made two batches! And instead of using 1 or 2 tablespoons of artificial sweetner, I only put about a teaspoon of regular sugar in. it doesn't really need much sweetness, it could probably be left out completely...

Foccocia style Flax seed break

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

2 cups flax seed meal
1 Tablespoon baking powder
1 teaspoon salt
1-2 Tablespoons sweetening power from artificial sweetener
5 beaten eggs
1/2 cup water
1/3 cup oil
Preparation:

Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well -- a whisk works well.

2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.

At 12 servings, each piece of bread has less than one gram of carbohydrate -- .8 to be exact -- plus 5 grams of fiber.

I've spent the past months in the Dominican Republic with my family and my husband's russian co-worker and his family. I learned some of their tasty recipes and today I'm making one of them. While it is cooking I decided to post here the recipe.

During this time I've added many fish to my diet. I notice it has helped my skin a lot (Omega 3's)! My skin is smoother, younger and moisturized. I also feel better internally.

It is called Ribniy Pirog and it's like an unsweet pancake filled with fish and onions. It is soooo tasty! They made this when we were going at night to the beach to make a bonfire and we took the fishcake to the beach.


The fishcake was made with Sea Bass Fillet, but they say it is traditionally made with mackerel but we couldn't fid it there. I came to Puerto Rico again and bought some mackerel which I'm using today and didn't liked it cause it's too fishy! I prefer sea bass.

Here's the recipe:

1 cup of milk (lowfat 1%)
all purpose flour(add little by little until you have a pancake mix consistency)
1 egg
1 teaspoon salt (or less)
3 ounces of fish fillet (mackerel or sea bass) finely sliced
1/2 onion finely diced
Any fish seasoning
2 tablespoons of oil (any kind you like)

Make the batter. Mix milk, egg and flour to a pancake mix consistency.
Then you will need onion, sliced on thin circles.

Make sure to heat the pan first (not very hot to avoid burning, but it should be prepared, med-low heat). Then you put a thin layer of dough on it (like 5mm or so) and keep there just for half a minute to let it become less liquid (dough itself should not be very cloggy). Then put the fish over that layer (it should cover the whole surface) and rounds of onion over it. Immediately add the covering layer of batter - not too much of it, but just to so that it completely hides all fish and onion parts.
Keep it like that, until it becomes more dry on the top and then flip the cake.

Overall time it takes on the pan depends on the temperature and size of the cake, but it's somewhere near 30 minutes.

Since I am on a candidasis diet, I can't have cereal or fruit-based smoothies, so I have learned to re-think what I have for breakfast. It is usually a huge salad ( I buy mixed salad greens already washed, so that part is easy), topped with eggs, sauteed fish, or, for meat eaters, a piece of calf liver or any other lean meat. This is all finished with my home-made dressing of olive oil, minced garlic and lemon or lime juice. As strange as it may sound, I love it.

Most breakfast cereals are too high in sugar, adding calories without nutrition. Even many yogurt drinks are very high in sugar, so it's good to read the ingredients if we are going to have a healthy breakfast.
